This refreshing, easy, and simple lime popsicles recipe (made with honey) is sure to make your summer days extra special.

One of my favorite combinations is the bright flavor of lime and the smooth, floral taste of honey. These lime popsicles are so yummy and will help keep you cool on those warmer summer days.
Lime popsicles bring a smile to my face and immediately makes me feel like I am on vacation. But the best part is this popsicle recipe only takes five minutes or less to whip up. Make these popsicles in the morning (or the night before). Then they should be frozen and ready to eat during the hottest part of the day. Yum!
What are some tips and important information for this lime popsicles recipe?
- Infants younger than the age of one should NOT eat honey. Honey contains bacteria that are toxic to infants. Try using different types of sweeteners like agave syrup, maple syrup, refined sugar, or coconut sugar.
- Don’t have fresh limes? Use store-bought lime juice from the bottle. You should still be able to get some delicious tasting popsicles.
- If this is your first time making popsicles, and you don’t have a popsicle mold, never fear. You could use a regular ice cube tray for mini popsicles. So fun!
- When filling your popsicle tray up, leave some room on top to allow for expansion while the mixture freezes.

Ingredients for this lime popsicles recipe:
- 5-7 limes
- 1/2 cup of honey
- 2 cups of water
Steps for the lime popsicles recipe:
1. Prepare the limes: will need 1/2 cup of lime juice
Roll 5-7 limes, this releases the lime juice.

Then zest one lime before cutting it to an extra splash of flavor (optional).

Next, chop all limes in half.

Finally, either juice the limes by hand or use a by-hand citric squeezer. I use a fork to help release that last bit of extra juice. You need about 1/2 cup of lime juice.

2. Combine:
Add 1/2 cup of lime juice, 1/2 cup of honey, and 2 cups of water.

3. Heat up:
On the stovetop heat up the lime, honey, water mixture until the honey is fully incorporated.
4. Pour into molds:
Once the lime mixture is cool, then add to the popsicle molds, top each popsicle with the lime zest, and add in the posicle sticks.
- Make sure to leave space at the top for the popsicle to expand.
- Don’t forget the popsicle sticks.
- A way to speed up the cooling process, would be to allow the mixture to cool in the refrigerator for 5 minutes. While the mixture cools, I like to do a quick tidy of the kitchen.

5. Freeze and enjoy!
Once the popsicles are frozen, kick back, relax, and enjoy.

What are some variations for this lime popsicles recipe?
Variations for the water: Let’s say you want to add a twist to this recipe. In place of 1/2 cup of water, you can add another fruit juice like: blueberries, blackberries, lemon, raspberries, strawberry, peach, or pineapple. If you do, let me know how it goes.
Variations for the honey: Maybe you are out of honey or you want to give these popsicles to an infant (children under the age of one should not eat honey). Instead of honey, you can try agave syrup, maple syrup, or granulated sugar. Adjust the amount of sweetener as needed.
How to store these lime popsicles?
If planning on eating these popsicles right away, you can leave them in the mold that you used. However, if you plan on storing these in the freezer more long term, place them in an airtight freezer-safe bag. If you do that, they should last from 6-8 months.
