- 3 ripe bananas
- 1/3 cup butter
- 1/3 cup honey
- 1 egg
- 1 teaspoon vanilla extract

1. Preheat the oven to 350° (175°c) and grease a bread pan (or muffin tin).
2. In a mixing bowl, mash up three ripe bananas using a fork until super smooth (depending upon your preference). Stir in 1/3 cup butter and 1/3 cup honey.
Tip: Try using the same measuring cup that you used with the melted butter for measuring the honey. Doing this will prevent the honey from sticking to the measuring cup.
3. Add in 1 beaten egg, 1 teaspoon of vanilla extract, and mix well.

4. Mix in 1 1/2 cup of einkorn flour, 1 teaspoon baking soda, and a pinch of salt.

5. Pour the batter into a greased bread pan (or muffin tin). Top with a sprinkling of semi-sweet chocolate chips (optional). Bake for 50-60 minutes until the toothpick comes out clean.

6. Remove from the pan, let it cool, and enjoy. This can be stored up to 4-6 days on the counter (or longer, but it will start to dry out) or you can freeze it and it can last for a very long time.
